* 3 lb. Australian leg of Lamb
* 1-1/2 Tbsp. Dijon or wholegrain mustard
* 1 Tbsp. honey
* 2 tsp. olive oil
* 1-1/2 tsp. dried rosemary
* 2 garlic cloves, crushed
* salt and black pepper, to taste
1. Combine the mustard, honey, olive oil, rosemary, garlic, salt and pepper and spread over leg of lamb.
2. Roast at 350°F for 1-1/4 hrs. for medium or until cooked to your liking.
3. Remove from oven, cover loosely with foil and set aside to rest for 15 min. Serve with roasted vegetables.
Tips:
1. Use any leftover roast Lamb in a sandwich with mayonnaise, cheddar cheese and lettuce or rocket (arugula).
